Apple juice is a cheap drink that improves health and is a traditional product in the juice beverage industry. Sugar is the main component of juice. The type of sugar directly determines the physical and chemical properties and sensory quality of the juice. The sugar content also indicates the nutritional value of the product. Therefore, the determination of sugar is the most important analysis item in the juice industry. The sugar in apple juice is mainly fructose, glucose and sucrose. Traditional chemical analysis methods use colorimetric methods to detect the content of reducing sugars and total sugars. In recent years, domestic experts have developed a variety of sugar concentration detection equipment based on optical principles, mainly used to determine the total amount of sugar, can not distinguish the type of sugar and the content of each sugar; The concentration of sugar components is more complicated in later calculations. Chromatography is the main method used to separate and quantify various sugar types. Among them, gas chromatography and high performance liquid chromatography are used to separate and quantify free sugars. The method is not selective, and it needs to be pre-separated by solid phase extraction cartridge. The pre-treatment is cumbersome, which is not only time-consuming and labor-intensive, but also has an impact on the accuracy of the results. In this paper, the ion sugar pulse amperometric detection method is used to detect the three sugar contents in apple juice. The sample can be directly measured after dilution, avoiding complicated pretreatment process. The results show that the method has better selectivity and precision.
