Shimadzu launches nitrite detection solution in soy sauce and its products

Recently, CCTV exposed the "problem soy sauce" using industrial brine as a raw material for soy sauce, which caused a sudden uproar. There are many impurities in industrial salt, the most common of which are sodium nitrite and heavy metal ions. Among them, the heavy metal content may be higher than edible salt, but it does not necessarily exceed the standard. Sodium nitrite, which is even more harmful to human health, is missing from the current standard testing of soy sauce. Because the edible salt has been processed, it already contains no or very little sodium nitrite, so the national standard does not detect this item, which just let the unscrupulous businessmen take advantage of it. Sodium nitrite, commonly known as nitrite, is not only a carcinogen, but ingestion of 0.2 to 0.5 grams can cause food poisoning, and 3 grams can be fatal. Therefore, the dosage is strictly limited when used in food additives.
